ABOUT THIS COFFEE AND PRODUCER
Villa Pastora farm, located in the municipality of Palestina, Huila, was established in the 1980s by Mrs. Pastora Anacona, Gerson Mora's paternal grandmother, who began the family’s coffee tradition by planting the first coffee trees. Since then, the Mora Ortega family has continued this passion for coffee across three generations, with Gerson’s father, Álvaro Mora, being central to the expansion of the farm’s legacy. Villa Pastora not only honors the memory of its founder but also represents the hard work and dedication of the family, focusing on producing high-quality, differentiated coffees. Although Álvaro has not received awards, he values the recognition from consumers who appreciate the care and passion that go in to each cup of coffee, prioritizing quality over accolades.
Gerson’s attention to quality is expertly showcased in this Aji Bourbon lot. The cherries are first floated and sorted for quality and ripeness. Then, they are depulped and fermented in bags for 72 hours. Following this, they are dried on patios for 16 days.
WHY WE SELECTED THIS COFFEE
We’re excited to share our first coffee from Villa Pastora Farm, and we were immediately thrilled by the quality in the cup. This lot is a washed Aji Bourbon, a varietal we haven’t sourced in some time, and it’s a beautiful reminder of the expressive range this variety can deliver when grown with care.
The cup opens with vibrant tropical and citrus notes, presenting as a bright green kiwi. As it develops, the acidity shifts into a longer-lasting sparkle reminiscent of Honeycrisp apples. Beneath the brightness, softer creamy layers emerge: sweet cantaloupe adds roundness to the profile, while a clean, tart cranberry finish keeps the cup crisp. There’s soft floral herbals in the background as well but doesn’t overshadow the complex fruit forward qualities.
Altogether, this is a complex and expressive coffee with multiple layers of fruit and a beautiful structure that's great for those seeking washed coffees with vibrant acidity but still lots of nuance to search through and enjoy. It’s a wonderful introduction to Villa Pastora and a compelling example of just how dynamic Aji Bourbon can be when grown and processed well.
