Located in the heart of Acevedo, Huila, Finca Anaya has been cultivated with dedication by the Aranda Gómez family for over 30 years. Nestled between two imposing mountain ranges and surrounded by rich biodiversity, this unique environment enhances every harvest. The farm is home to guadua bamboo and fruit trees that contribute to the ecosystem and accompany the daily work of the pickers. Every coffee bean grown here is the result of years of tradition, passion, and respect for nature.
This yellow pacamara goes through a multi-stage washed process that is enhanced by yeast inoculation and co-fermentation. First, after cherries are sorted and disinfected, they are fermented for 24 hours in plastic tanks. Then, they are depulped and fermented a second time for 48 hours. After the second fermentation, they are submerged in a solution composed of yeasts and a pre-fermented fruit mixture. After this they are washed with water at 20’C and dried for 8-12 days.
WHY WE SELECTED THIS COFFEE
We’re typically cautious with co-fermented coffees since they often come across as overly intense and one-dimensional. This lot is different. Using the uncommon Yellow Pacamara varietal with a combination of fruit mixture and yeast, the fermentation brought out a layered complexity that will be a fun conversation starter for all.
The experience is like walking into an Asian bakery and boba shop—warm pastry notes alongside tropical fruit brightness. On the nose, there’s a clear impression of tropical passion fruit cake. The cup opens into a floral tea character similar to chrysanthemum, and finishes with a sweet, peach tapioca-like quality that’s round and juicy.
It’s an advanced fermentation with vivid almost comical flavors, yet it remains very drinkable and complex.
