ABOUT THIS COFFEE AND PRODUCER

Rigoberto Cuellar is a 33-year-old coffee producer from a multi-generational farming family in Salado Blanco, Huila. He grew up among the coffee trees, learning the craft from his father—planting, tending, and harvesting—until coffee became not just work, but a way of life.

At 27, Rigo faced the sudden and heartbreaking loss of his father, a respected and hard-working man in the community. In the difficult months that followed, grief made it hard to carry on. But over time, Rigo found the strength to step forward, determined to honor his father’s legacy and keep the farm thriving.

Today, his dedication shows in the care he puts into every harvest. This coffee goes through six meticulous steps: cherries are picked and sorted, oxidized in hoppers for 36–40 hours, washed and pulped, then fermented in open concrete tanks for 24–36 hours. After a second wash, the beans are dried for 15–20 days—resulting in a cup that reflects both his skill and his story of perseverance.

This double fermentation washed Pacamara is one of the most distinctive examples of the variety we have tasted. The exceptional cherry quality reflects the meticulous work of Rigo, the producer, who cared for this crop with precision from harvest through processing.

The controlled double fermentation brings clarity and intensity to the cup, highlighting vibrant strawberry shortcake pastry flavors supported by a creamy and full body. Hibiscus florals add brightness and aromatic lift, while layers of tropical fruit with pineapple being the most prominent emerge across a range of brew methods.

This is a rare expression of Pacamara that balances process driven character with clean and varietal driven complexity.
