ABOUT THIS COFFEE AND PRODUCER

Eusebia Rudas Camara is one of the first farmers to join the ValleInca farmers’ association. She gives remarkable attention to her crops by adhering to a strict fertilization regimen as well as developing a complex irrigation system for her farm. She utilizes the natural streams that run through Pukamocco to accomplish this. The Pisonay trees that are native to the farm provide shade for the coffee plants as well as covering the farm in a deep red color when they bloom which is where the name “Pukamocco” (Red Hill) comes from. This Typica lot was traditionally washed with a 36 hour fermentation followed by slow drying for 18 days.

WHY WE SELECTED THIS COFFEE

This is our first time working with Pukamocco and another reminder of the range of coffees coming out of Peru. Rather than relying on intensity, this lot is defined by its balance, clarity, and ease of drinking.

The cup opens with a round pear-like sweetness, followed by a gentle yellow citrus character that reminds us of pomelo. The fruit is clean and well integrated, giving the coffee brightness without feeling sharp.

As it cools, the finish becomes increasingly reminiscent of sencha tea, with a soft herbal quality that lingers long after each sip. It gives the coffee a calm, refreshing character that makes it especially enjoyable as an everyday brewer and very unique for the typica varietal.
