ABOUT THIS COFFEE AND PRODUCER
Finca Juan Martín, located at 2,050 meters in Sotará, Cauca, Colombia, is a high-altitude coffee farm owned by Banexport S.A. and established in 2018 as a model for sustainable, high-quality coffee production. The farm cultivates several varieties, including the Red Striped Bourbon—a rare natural mutation of Red Bourbon discovered in Huila in 2015, known for its round, red cherries with light stripes and complex flavor profile. The coffee undergoes a meticulous fermentation process: after selective harvesting, the cherries are disinfected, sorted, and pulped before being placed in a stainless steel bioreactor. This bioreactor allows for precise control of pH, temperature, and Brix levels, enabling natural yeast strains to ferment the sugars in a monitored environment that enhances the variety’s unique aromatic and flavor attributes. After this process, the coffee is washed three times before moving on to the next stage of processing.
WHY WE SELECTED THIS COFFEE
Harry, our green sourcer, first tried Juan Martín’s washed coffees two years ago and was immediately struck by their exceptional quality. Ever since, we’ve been looking for the right moment to feature Juan Martín’s work—and this release felt like the perfect fit.
When we cupped this coffee, we were hooked but also perplexed by its presentation so we naturally thought it would be a perfect fit for MCL! The initial white to green floral notes and bright lemony citrus reminded us of Geshas from this region, but then it opened up into deeper red cranberries and sweet plum, almost like some Pink Bourbon qualities. It struck this really fun balance between familiar and unexpected, which made it a joy to taste and explore.
We are really loving how the complexity developed with rest—around the five-week mark, it really started to shine. We’re so glad you picked this up and joined us on this tasting journey. We hope it was just as exciting of an exploration for you as it was for us!
