ABOUT THIS COFFEE AND PRODUCER
Liliana Ramírez is a small-scale producer in Anzá, Antioquia, farming just around 1,000 coffee trees. Her chiroso stands out for its clarity and expressive profile, shaped by careful, traditional production and an unusually thoughtful harvest rhythm.
This coffee is processed as a traditional washed lot using a local method known as “3 Cochadas,” common among very small farms. Cherries are harvested over three consecutive days, floated and pulped daily, then fully washed together on the fourth day. The result is a single lot combining 3-day, 2-day, and 1-day fermentations, creating added depth while maintaining balance and precision.
In the cup, this Chiroso shows passionfruit, delicate florals, lemongrass, and bright acidity, anchored by a smooth, velvety body. Careful cherry selection, floating, and consistent drying contribute to a clean, vibrant expression that highlights both variety and terroir.
WHY WE SELECTED THIS COFFEE
We’re thrilled to be working with Finca El Yolombo, a small farm that we’re able to partner with thanks to the work of our exporter, Desarolladores. Their efforts in finding this farm and supporting it with best practices made this coffee possible, and we’re grateful to be part of that chain.
We have a deep appreciation for high-altitude, well-grown Chiroso, and this lot is a great example of why. It’s expressive and clean, with really well-defined fruit character that feels both sweet and tart. We get bright key lime up front, layered with pink grapefruit that adds structure to the cup.
What really sets this coffee apart for us are the subtle herbal notes that come through alongside the citrus. There’s a slight resinous quality, reminiscent of juniper, that adds a unique and enjoyable twist to the profile and keeps the cup feeling lively and interesting all the way through.
