ABOUT THIS COFFEE AND PRODUCER

Wilder Lazo is actually a veterinarian specialized in livestock farming. As coffee prices continued to decline in 2016 and his father fell seriously ill, he decided to bring the family farm into the modern era with his brother. Initially, their coffees scored between 80-83 points on the cupping scale, despite elaborate processes and preparations. Wilder started examining soil samples and using targeted nutrients and fertilizers to neutralize the pH value, thereby increasing the availability of nutrients for the coffee trees. He refers to this as precision agriculture.

La Dinastía farm is where Wilder planted his first Geisha trees. He got seeds from Colombian farms, Panamanian farms and friends from Costa Rica. He planted all of them together and purified the genetics, eliminating trees that didn’t match the flavor profile he likes, or that produced very low yields.

For the yellow honey gesha, Wilder picked the ripe cherries and floated them in water to remove impurities. Then he dry-fermented them in cherry for 36 hours before de-pulping them and transferring them to the drying beds. This lot has been processed using the same equipment that was previously used to process a large batch of lemongrass gesha. This has caused the yellow honey lot to acquire the distinct qualities of lemongrass, despite not being directly fermented with it.

WHY WE SELECTED THIS COFFEE

We're excited to be working with Wilder Lazo of La Dinastía once again, bringing back a familiar producer with a new expression of one of our longtime favorites. This Gesha has all of the clarity and depth we remember, while offering something distinctly different.

The cup opens with layered notes of dried apricot and tangerine, creating a bright, sparkling acidity that gives the coffee a vibrant sense of energy. The Gesha itself has an impressive amount of sweetness and complexity before the processing even begins to show.

A light lemongrass influence adds another dimension to the coffee, lifting the aromatics with notes of lemongrass and jasmine while preserving the character of the Gesha beneath it. The result is a coffee that feels expressive without losing its balance, where the infusion complements the coffee rather than defining it.
