ABOUT THIS COFFEE AND PRODUCER

José Ignacio Gómez is a second generation coffee grower in his family. José and his father acquired El Paraíso from his uncle, who had previously planted and cultivated coffee on the land.

El Paraíso farm began growing coffee during the last decade of the 20th century. It was one of the first to start growing coffee in the region of the municipality of Buesaco, The farm is dedicated to the exploitation of varietals such as geisha, caturra, bourbon (sidra, pink), java and castillo; in addition to generating direct work year after year for many farmers in the region, Within the coffee calendar, the farm has its highest production season during the months of May, June, July and part of the month of August.

This natural Pink Bourbon is first hand picked for the highest concentration of sugars in the fruit mucilage. It is then density sorted in water before going through 96 hours of anaerobic fermentation in plastic tanks. The cherries are then drained of their juices and dried on sunbeds for 4 days, then dried for another 5 days in continuous movement machines.

From the very first sip, it hits with candied grape sweetness, a clear sign of the abundance of rich sugars developed during processing. It's got a big body, bold juiciness, and a playful funk that makes it a perfect pick for adventurous drinkers. The flavors finish into a sweet red wine, smooth and lingering.
