ABOUT THIS COFFEE AND PRODUCER
Finca Mi Finquita was founded by Ratibor Jr. and his wife, Tessie. Mi Finquita is a project farm centered around developing coffees that can stand tall in the ever-changing landscape of modern coffee production. At Mi Finquita, coffee from a few select farms undergoes unique processes that are tailor made to customers’ needs. Ratibor and Tessie employ science as well as traditional and innovative fermentation methods to achieve the desired profiles, all while maintaining the same strict processing standards the Hartmann family has maintained for generations.
From Tessie Hartmann:
Start with a careful selection of ripe cherries, ensuring only the best are chosen. The batch is then depulped, removing the outer fruit layer. Next, the coffee is pre-dried on an African bed for about 12 days, allowing for initial moisture reduction. After this, the batch is moved into a controlled 'black room' to maintain consistency in the drying process through a dehydration technique.
WHY WE SELECTED THIS COFFEE
Similar to the other natural Gesha we purchased from the Hartmann team, we also fell in love with their washed Gesha from Finca Mi Finquita. It has a classic Panamanian washed Gesha profile of ultra high quality and we are excited to roast and pair this alongside the release of the natural. Clean floral coffee enjoyers will especially love the level of clarity and vibrancy the florals and citrus being delivered in this coffee. It’s an excellent example of incredible terroir and fruit quality as you’ll be immediately hit with a bouquet of white florals and complex stone fruits and citrus on first taste. There is still a reason why washed Geshas from Panama are still regarded as some of the best in the world and the Hartmann team definitely delivered on that this year. Also similar to the natural lot, we were only able to secure a small portion of the lot to roast and serve so don’t miss your chance to try this incredible coffee!
