ABOUT THIS COFFEE AND PRODUCER

This special coffee is produced by Wilton Benitez and Oscar Riascos in the Cauca region of Colombia on La Macarena, one of the member farms of Granja Paraiso 92. Wilton is known for being a pioneer in developing new and innovative coffee processing methods. Typically, his coffee undergoes multiple stages of carefully controlled processing and yeast-inoculation to bring out unique flavor profiles. However, Just like our previous washed gesha offering from Wilton, his wush wush undergoes the same simple process. The cherries are first depulped, then left to ferment in open air for 36 hours and finally, they are dried. This results in a true, clean showcase of the terroir of Granja Paraiso 92.

WHY WE SELECTED THIS COFFEE

Following our release of the washed Gesha from Granja Paraiso 92, this lot offers another perspective on the farm’s unique terroir—this time through the rare Ethiopian variety, Wush Wush.

Known for its low yields and delicate structure, Wush Wush is seldom produced at scale—and even more rarely with such balance and clarity, free from the overpowering herbal notes that often accompany the variety. This lot was fully washed using a traditional process, with no added yeast or experimental fermentation, allowing for a pure expression of variety, place, and cultivation.

The profile is distinct and quietly complex: botanical and tea-like, with layered notes of sugar pear, stonefruit, and pomelo. A touch of lemon verbena adds a floral lift. Sweetness is balanced throughout, leaving a clean, refined impression.
