ABOUT THIS COFFEE AND PRODUCER
This special coffee is produced by Wilton Benitez in the Cauca region of Colombia on one of the member farms of Granja Paraiso 92. Wilton is known for being a pioneer in developing new and innovative coffee processing methods. Typically, his coffee undergoes multiple stages of carefully controlled processing and yeast-inoculation to bring out unique flavor profiles. However, this washed gesha from Wilton was created using simple, traditional techniques. The cherries are first de-pulped, then left to ferment in open air for 36 hours and finally, they are dried. This results in a true, clean showcase of the terroir of Granja Paraiso 92.

This coffee offers a rare and beautiful glimpse into the raw potential of Wilton Benitez’s renowned farm in Colombia—stripped of the processing innovations it's known for. While Wilton’s coffees are celebrated for their bold, yeast-inoculated flavor profiles, this release takes a different path.
We chose this lot because it reveals something few have tasted: the pure clarity of the farm’s Gesha variety through a traditional washed process. No added yeast, no fermentation tricks—just the intrinsic quality of the fruit, the soil, and the skill behind its cultivation.
What shines through is remarkable: an incredibly clean cup with vivid notes of honeysuckle, meyer lemon, nectarine, and tangerine. The sweetness is high and beautifully balanced by citrus-stonefruit acidity.
