ABOUT THIS COFFEE AND PRODUCER
We are excited to finally have Finca Soledad and the Jijon family back on our menu! This lot was sent to us as a surprise from the Jijon family. Pepe's wife Monique oversaw the processing for this lot.
The sidra cherries were first fermented for 6 days in a cold room. Then they were depulped and fermented in their mucilage for another 2 days in the cold room. The coffee was then quickly rinsed and fermented in a dark room for 20 days. Lastly, they were removed and dried in shaded beds for 10 days. This resulted in an exquisite expression of Finca Soledad that Jose has affectionately named “Florcita”, a nickname he uses for his wife, Monique.
WHY WE SELECTED THIS COFFEE
As a surprise lot from our friend Pepe, we could not be more thrilled with the taste profile of this coffee. The sidra cherry shines with the exceptional quality long associated with the Jijón family farms. Through extended fermentation and a meticulous honey process, this lot gains remarkable depth and layering in both acidity and body, while remaining free of funk thanks to precise control in cold and dark rooms.
This is another masterpiece from Finca Soledad, where the terroir and processing continue to reach new heights each year. To highlight the many separate layers of this coffee, we have roasted it to an ultralight profile that emphasizes clarity while highlighting elegant florals, lively acidity, and a creamy body that develops as the cup cools.
The journey begins with bright lime citrus and delicate purple lilac florals. As the temperature drops, crisp sweet and tea like peach snapple notes appear and gradually blend into a tropical mango tartness. The complexity is striking, and every sip reveals something new.
