ABOUT THIS COFFEE AND PRODUCER

The Challenge: Norbey has a unique and privileged land where he has grown over 10 different coffee varieties. And beyond his passion for excellence, there's something mysterious about his farm because its fruits are extremely sweet and fruity, as if each tree had a purpose to give the best of itself. His challenge has been to distinguish himself as one of the most outstanding coffee growers in the region for his crop and process quality and his unique and irresistible fruits that reflect in its notes his passion for perfection.

COFFEE PROCESS:

  1. After being picked, all the cherries are selected by hand—just the ripe 70%, 20% overripe, and 10% half-ripe cherries (red color).

  2. The mass is floated to select only the densest cherries and to remove bacteria

  3. The mass is kept in a tank to start the aerobic fermentation and the acetic process. It gives the fruity smell and taste of the coffee.

  4. After 12 hours of fermentation, a second double fermentation is done also aerobically

  5. The mass is spread in the sunbed dryers with mucilage still on for 2 weeks until the grain is under 11% of moisture.

  6. The coffee is kept in Grain Pro bags with the parchment for at least 2 weeks before it is milled and exported.

After traveling the country picking coffee from the age of 10, Norbey Quimbayo met his wife in Bogota and moved to Acevedo. They began using their money to buy small plots of land that eventually became a farm of their own. After some hard years, that land had to be sold, but Norbey kept dreaming of their perfect farm, and couldn't resist buying property and trying to make it work. Eventually, they found La Esmeralda, and quickly it blossomed into one of the most beautiful and pristine farms in the area. Now, harvesting Castillo, Sidra, Pink Bourbon, and Java, Norbey is raising his children as a new generation of coffee producers that share his intense passion to care for the land and the fruit they've been given, and it truly shows in the cup.
