ABOUT THIS COFFEE AND PRODUCER

From Banexport:

Finca Juan Martín, located at 2,050 meters in Sotará, Cauca, Colombia, is a high-altitude coffee farm owned by Banexport S.A. and established in 2018 as a model for sustainable, high-quality coffee production.

For this washed sidra, the coffee cherries are disinfected, sorted, and pulped. The beans are then placed in a bioreactor where a controlled oxygen flow alongside other parameters are carefully regulated to optimize the conditions. This allows the yeast strains naturally present in the coffee cherries to metabolize sugars through respiration rather than fermentation. By fine tuning these parameters, the process minimizes the production of organic acids while promoting the development of aromatic precursors that enhance the profile characteristics of the coffee beans. After this process, the beans are washed three times and dried for 10 days.

WHY WE SELECTED THIS COFFEE

We’re excited to share our second release from Juan Martín in Colombia, this time a beautifully complex take on the Sidra variety.

This washed lot offers a vibrant and layered cup, opening with bright notes of kumquat, pink grapefruit, and mango. Citrus and tropical fruit carry through the middle with clarity, anchored by a soft vanilla sweetness and a subtle floral-spice complexity.

The washed oxidation brings a lively, sparkling acidity that adds energy to the cup with clean, refined brightness devoid of any funk.

It’s a versatile and engaging coffee, well-suited for everyday pourovers or as a nuanced light roast espresso.
