ABOUT THIS COFFEE AND PRODUCER
Paulina is a first-generation coffee producer. Born in the city of Cusco, she lived there for most of her life, where she had two daughters. At the age of 40, she separated from her husband and decided to move closer to her family in Amaypata, Cusco. As a single mother, she had to support her two daughters on her own. Looking for opportunities, she became interested in coffee and thought it could be a good business for her small family of three. At that time, the regional government was offering small plots of land in Amaybamba to promote coffee development. She signed up and received a 1.5-hectare plot with the help of the government. She began by producing 6 quintals of Catimor coffee per year. In 2021, she planted her first Geisha plants. In 2024, her first Geisha harvest came in and to her surprise, the quality was extraordinary. She entered the first Incawasi coffee competition in November 2024 and earned 6th place.
For this lot, Paulina decided to use a traditional washed process. This was due to the farm experiencing an extremely rainy season in 2025. Paulina’s instinct told her that any other type of processing might be spoiled by the temperature and humidity. Using this instinct, she utilized one of the few sunny days in the season to harvest, wash, and dry the entire lot on the same day.
WHY WE SELECTED THIS COFFEE
We're very excited to be working with Paulina Maytan of El Páramo again. She was one of our first relationships in Peru last year and produced a Gesha that really got us hooked on exploring the country's coffees. When we tasted this year's harvest and saw how much the coffee had developed, we knew we wanted to work with her again.
This washed lot has remarkably clear terroir expression, with a clean, juicy starfruit character leading the cup alongside the soft sugary sweetness of Rainier cherry.
As it opens up, layers of wildflower florals begin to emerge, with a wide range of delicate floral notes moving through the cup. As it cools, the profile settles into a sweet, rounded donut peach character that brings everything together.
It's been really rewarding to see how Paulina's harvests continue to develop from year to year, and this coffee is a beautiful example of that progression.
