ABOUT THIS COFFEE AND PRODUCER

Jorge Rojas is a fourth-generation coffee grower whose journey began at 13 years old when his mother gave him an opportunity to work on the family farm. After learning everything he needed to know about coffee production, Jorge inherited part of his father’s farm and bought a parcel of land from his neighbor. This plot of land became known as El Jardin.

For this lot, cherries are first flotation sorted, then fermented for 24hrs in their mucilage. After this they are traditionally washed before being dried for 15 days.

WHY WE SELECTED THIS COFFEE

We're excited to source from Jorge Rojas of Finca El Jardin in Colombia for the first time. Jorge has become well known for pairing distinctive processing styles with exciting varietals, and this Chiroso is a great example of what that combination can produce.

Although this lot is primarily washed, the fermentation is carefully controlled to boost the coffee's natural acidity without obscuring its clean, traditional washed character. The result is a crisp, bright expression that lets the Chiroso's fruit remain at the center of the cup.

The first sip is full of tropical fruit, with a big mango character leading the profile. As it cools, the fruit gradually shifts toward strawberry, while a round Bartlett pear sweetness runs through the cup and keeps everything feeling soft and juicy.

It's a particularly enjoyable expression of Chiroso with a distinct fermentation style.
