ABOUT THIS COFFEE AND PRODUCER

Chevas Coffee Estate is a family-run specialty coffee producer in Boquete, Panama, combining generational heritage with modern, experimental processing techniques. Founded in 2016 by José Luis Chevas, the farm partners with a world-class barista to craft complex Geisha microlots. In the 2024 Best of Panama competition, Chevas submitted three standout lots and achieved 9th place in the Geisha Natural category, earning a spot among the most coveted auction lots globally.

From Chevas Coffee Estate:

This Gesha was depulped upon arrival at the processing station, preserving the freshness and integrity of the fruit. Immediately after, the parchment was placed back into the original harvest sack - without water - for a 48-hour dry oxidation phase, allowing the mucilage to ferment naturally through controlled aerobic exposure. Following this stage, the coffee underwent a gentle, extended washing process over three days to fully remove the mucilage and ensure cup clarity. The lot was then sun-dried on raised African beds under consistent airflow, promoting an even and gradual drying curve. The result is a washed geisha with a clean, elegant profile - floral, sweet, and structured - with delicate acidity and a lingering finish that reflects both craft and climate.

WHY WE SELECTED THIS COFFEE

We are thrilled to share the first release in what will become a lasting collaboration with Jose and the Chevas coffee estate. His masterful approach to coffee cultivation, combined with the estate’s excellent terroir, sets the foundation for something truly extraordinary. Every step of the post-harvest process has been executed with incredible precision, allowing the intricate nuances of this complex coffee to shine while remaining very pure to the terroir.

The result is a lovely tropical, ultra floral presentation that feels both vibrant and refined. Among the many geshas we have had the privilege to taste, this washed Panama stands out as one of our floral forward favorites. Its flowy body carries layers of lively acidity that unfold with each sip, creating a drinking experience as beautiful as it is memorable.

This coffee is not only a stunning release in its own right but also a wonderful beginning to what we know will be a meaningful and long-lasting relationship with the Chevas estate.
