ABOUT THIS COFFEE AND PRODUCER

This SL9 lot is from Chavez Estate. Chavez estate is a family run operation that grows multiple varietals and has participated in the Peru Cup of Excellence twice. Ricardo and Virginia oversee all operations on the estate alongside their children, Raquel, Jhenrri, and Richard. Jhenrri is in charge of quality control and agricultural innovation, which he learned while working with the Inkawasi Cooperative. Together, the Chavez family manages several interconnected plots of land. There are a total of four SL9 lots from the estate. This SL9 is from Lot #3. Lot #3’s cherries are first fermented in mucilage for 30-35 hours. Then they are traditionally washed and dried.

WHY WE SELECTED THIS COFFEE

We're excited to present our last lot from Chavez Estate for the season, and one of the most unique coffees we've tasted from them. After exploring several of their SL9 lots this year, this one offers a very different expression despite being processed as a straightforward washed coffee without anaerobic fermentation.

The cup is immediately loud and juicy, with a big nectarine sweetness forming the center of the profile. A bright Meyer lemon note sits above the fruit, adding a sharp citrus lift. Orange blossom florals run throughout the cup, becoming more pronounced as it cools. Alongside them is a distinct lychee character that adds a soft tropical sweetness. Other nuanced tropical qualities come in and out with different brew styles as well.

It's exciting to taste how many different layers this coffee reveals. Even without the fermentation techniques we've seen in some of Chavez Estate's other lots, the SL9 itself has plenty of intensity, sweetness, and complexity.
