Our family business, Zarza Coffee, is a third-generation coffee-growing legacy rooted in the mountains of Bruselas, Huila, Colombia. This coffee underwent 48 hours of oxidation in a double fermentation thermal shock processing, finishing as a washed coffee.
WHY WE SELECTED THIS COFFEE
We’re back with one of our favorite producers, Zarza Coffee. We’ve loved their coffees in the past, and this lot is something special. It’s a Pink Bourbon varietal that went through 48 hours of oxidation in a double fermentation, finished with thermal shock processing, and washed.
The result? A super fun, tropical cup. You’ll taste passionfruit and lychee, with a smooth, candy-like sweetness that reminds us of tropical Hi-Chews. The thermal shock adds a creamy, milky texture that makes this coffee stand out in a really playful way.
What makes it shine is the balance—there’s enough of that process-driven character to keep things exciting, but it never goes overboard.
