ABOUT THIS COFFEE AND PRODUCER

This coffee is a Pluma Hidalgo variety, an offshoot of the Typica varietal, and grown primarily in the Pluma region of Oaxaca — and produced by the San Agustin Loxicha community. This community is nestled in the lush, densely forested slopes of the Sierra Sur region of Oaxaca, where the coffee farms thrive under a thick canopy of native shade trees. These trees not only provide essential shade but also contribute to soil fertility, water collection, and supply resources for construction, medicine, and food. Farmers plant coffee seedlings with a spacing that helps maintain the high biodiversity unique to Loxicha, with many farmers being young and under 30, showing a promising future for coffee in this region.

The local variety, Typica, has been cultivated here for over 80 years, known for producing a remarkable cup quality. Recent years have seen the planting of younger coffee trees to continue this tradition. These farms are part of a Zapotec community practicing Tequio, a form of communal work. During harvest, families stay in temporary housing and transport their coffee to a central collection center by mule or on foot, a journey taking 2-3 hours. Despite the challenges of remote access and young people migrating to the capital for better opportunities, many farmers remain dedicated to their land and traditions, preserving the unique culture and high-quality coffee production.

WHY WE SELECTED THIS COFFEE

We chose this coffee for its relatively low acidity but with a pleasant apple/pear-like malic acidity to still bring balanced complexity to the coffee. This coffee produces a very balanced cup that is great either by itself as filter coffee, or as an espresso paired with milk.
