ABOUT THIS COFFEE AND PRODUCER
This spectacular coffee is a washed typica mejorado. After harvest, it was held in immersion tanks for 24 hours to homogenize and slow down any cellular change. Following this, it was depulped to ferment for 24 hours in GrainPro bags and then subsequently had its mucilage washed off. This is the first time in about 3 years that this coffee and process has been brought back to the market. The “JJ” is short for “Jose y Jose”, with Pepe working closely together with his son Jose to produce and process this coffee. This coffee is produced by Jose Ignacio “Pepe” Jijon of Finca Soledad in Intag valley, Imbabura, Ecuador. He was a mountaineer before finding success as an incredible coffee producer. His approach to his coffees is built on his love and passion for the land, and is evident in the impeccable coffees he produces.

WHY WE SELECTED THIS COFFEE
We were approached by Pepe with the opportunity to reintroduce this Typica Mejorado, which we immediately accepted. This coffee is a continuation of our ongoing relationship with Pepe and Finca Soledad to share more of his beautiful coffees and this is just our second coffee offering from them. This coffee is very clean, with a well defined sweetness and acidity of white peach and vibrancy reminiscent of citron.
We are roasting this coffee with an ultralight roast profile, to best preserve the white florals we detected in our early roasting experiments and showcase the incredible terroir from this harvest. These florals are complemented well with abundant stone-fruit flavors. This coffee has all the hallmark characteristics of the Typica Mejorado varietal, which is grown primarily in Ecuador. We hope you enjoy this less common and beautiful processing style from Pepe.
