ABOUT THIS COFFEE AND PRODUCER
Abel Domínguez is a producer of the 3rd generation, he is a member of the Domínguez family who have obtained different awards in cup of excellence Honduras in different years. Under his own brand, Blooms Coffee, has been selling his Las Flores coffees and Finca Liquidambar coffees roasted in Honduras. We were fortunate to meet Abel at SCA Chicago and he was extremely kind and patient working with us by sharing samples and background and we were drawn to the unique flavors of the Parainema varietal which is one of Honduras’s most promising cultivars in making a name for themselves on the world stage of coffee quality.
This natural processed Parainema varietal was harvested at 23 degrees brix and subsequently dried for 28 days in raised African beds.

Blooms Coffee was born in the mountains of Marcala, from a family of producers since 1940. We are the third generation that unites efforts, passion and above all love in each process, selecting seeds of the highest quality, which finally becomes an exquisite coffee, recognized nationally and internationally. We are currently positioned among the 10 best coffees in Honduras, awarded for cup of excellence, an event that is held every year in coordination with the Honduran Coffee Institute to reward the best coffees in the country.

Meeting a producer in person who truly embodies passion and dedication to specialty coffee is always inspiring, and Abel is a perfect example of that commitment. We’ve long wanted to feature a Parainema varietal on our menu, and we believe this offering is the perfect fit.
In the cup, you’ll experience a combo of rich red and purple fruit flavors, complemented by a touch of funkiness that adds intrigue without being overwhelming. This coffee is ideal for those who enjoy a bold, jammy profile with a fuller mouthfeel. Depending on your brewing method, you might discover vibrant notes of strawberry jam or deeper, grape-like flavors with hints of black currant tannins in the finish at higher extraction levels.
For the best introduction to this coffee, we recommend starting with a lower extraction and a slightly cooler brewing temperature to highlight its unique characteristics.
