Why we selected this coffee

A fantastic low acidity coffee with a thick creamy body. We loved the immediate reminder of milk chocolate on every sip and caramelized sugar which tastes like chocolate cookies. This unique Timor hybrid varietal and climate produces some treasures like this coffee that we can't wait to optimize in our roast to produce the most chocolate forward espresso we've had yet. It would work well as a classic tradition profiled filter coffee too. As this is still in the medium roast range all char and smoke flavors are not present and you are left with a clean expression of what this coffee has best to offer. That said this would be a perfect candidate to explore optional dark roast profiles. Stay tuned for roast level selection on this one in the future!

Producer Info

This coffee is from Timor-Leste, also known as East Timor, which represents the eastern half of Timor island. It is part of the Indonesian archipelago, close to the northern coast of Australia. The island is home to the highly adaptive and resilient Timor Hybrid varietal — a cross behind local robusta and typica trees.

This coffee is organically produced by 14 smallholder farmers from the Lacau group of farmers in the Ducurai village, organized by Café Brisa Serena. Café Brisa Serena is a social enterprise and exporter that works with the local smallholder farms to develop Timor-Leste’s coffee value chains and specialty protocols.

The coffee cherries were handpicked by the smallholder farmers, and then processed and fermented at their homes on personal or shared equipment. The coffee is then dried on raised beds and sorted for quality, adhering to specific harvesting and processing protocols to ensure specialty quality standards.
