This coffee growing region in Oaxaca is made up of small family farms that surround the Sierra Madre del Sur coastal mountain range. Producers utilize organic practices to manage their farms and ensure sustainability of the environment. Approximately 40% of the producers are women, relying on coffee income to support their families.
After post-harvest processing, the coffees are decaffeinated through the sugarcane process — a process that utilizes naturally derived compounds from fermented sugarcane to extract the caffeine from the coffee beans. This process is less harmful than traditional decaffeination methods that rely on artificial chemical solvents to remove caffeine.
