ABOUT THIS COFFEE AND PRODUCER
For this coffee, each cherry is handpicked at the peak of ripeness, ensuring only the finest beans progress to the next stage. Following a delicate flotation process to remove lighter cherries, natural sugars are carefully monitored before beginning a layered fermentation journey. The process starts with 14 hours in open tanks to unlock the cherries' flavors, followed by an 18-hour oxygen-free fermentation in a sealed environment to deepen their profile. Finally, the cherries undergo pulping and a refreshing 24-hour aerobic fermentation, resulting in beans with unmatched depth and complexity.
The coffee is then dried in a mechanical dryer at a consistent temperature of 37°C and stored in a temperature-controlled warehouse maintained between 18°C and 19°C, preserving its unique character and freshness.
The quality of our regional coffees is supervised by the community program of Café Granja La Esperanza (CGLE). They transfer knowledge and good production practices to their associated suppliers, guaranteeing cups of 84 points and higher. They can guarantee unique profiles, which can be exclusive according to the requirements of their clients.

WHY WE SELECTED THIS COFFEE
Cafe Granja La Esperanza has been experiencing a lot of popularity in the coffee industry in recent years and we are excited to finally showcase them in our offerings, specifically first from the Cerro Azul farm. For this hybrid washed geisha, we get an incredibly complex cup profile that is both exceptionally clean but tropical and dynamic in acidity. Through the myriad of fruits presented in the coffee, we pick up on a strong tart hawthorn first with sweet lingering yellow mango creaminess. There are plenty of florals with a citrus forward orange blossom that is most distinguishable between the bunch. This is one of our lightest roasted Novas since switching to a Loring roasting machine and benefits from proper rest before brewing.
